Wakefield Estate Chardonnay, Clare Valley 2018
Wakefield Wines were founded in 1969 by Bill Taylor, and is still (third generation) family owned today. Still based in the excellent cool climate winemaking region of Clare Valley in Australia.
The grapes for Wakefield Estate Chardonnay are harvested and delivered to the winery at night to preserve the freshness and aromatics in the grapes. The majority of the juice is barrel fermented in French oak barrels (10% new oak, 20% one year old and the remainder in second and third fill). Some of the wine is fermented using native yeast and some is fermented in stainless steel. All parcels are lees stirred for 4 months and are then finally aged in oak cask for a further 6 to 8 months.
Tasting note: pale straw with green edges in appearance. The nose is pronounced with aromas of stone fruit, mingled with ripe tropical fruit, citrus and toasted cashew. The palate is clean with fresh peach and pineapple, combined with smoked creamy oak and spice, finishing full with lively mouth filling fresh tropical fruit, long and persistent. Best served with Chicken Caesar salad, chicken with Mediterranean herbs or on its own, do not over chill and would be best consumed young 1-3 years.
